Soban is the pilot restaurant of Korean-born chef D.H. Shin.
Shin was raised in Seoul, where his mother owned a small restaurant of her own. He first came to the U.S. as a high school exchange student in the Midwest, and later went on to study classic French cooking at the Culinary Institute of America in Hyde Park, New York. Following graduation, he spent the next several years cooking around the Great Lakes of Minnesota.
In 2011, Shin, along with his wife and two sons, moved to Portland, Oregon. The bounty of fresh ingredients from the land and waters of the Pacific Northwest threw the doors open to new culinary possibilities, and Shin felt a strong urge to reconnect with Korean cuisine. He began to explore the concept of marrying Pacific Northwest ingredients with Korean flavors and French cooking techniques.
The result of this fascination has become Soban. Shin works passionately from his roots and professional culinary background to delight guests with exciting, bold flavors, and provide a place to taste Korean-inspired food, concepts and flavors in a comfortable, familiar way.
